The Winemaker: Mauro Monicchi
He has a degree in Agricultural Sciences (Plant Production) from the University of Perugia and a diploma in oenology from the University of Bordeaux with a thesis on the "Phenolic ripening of Sangiovese in Chianti. Adaptation of vinification". His education involved him in winemaking and experimentation in French and Italian wineries: Château Moulin à Vent in Moulis en Medoc (Bordeaux, France); Syndicat Viticole di Saint-Emilion (Bordeaux, France), under the supervision of Professor Y. Glories of the Bordeaux School of Oenology; Agricola San Felice (Castelnuovo Berardenga, Siena, Italy). Based on his experience in Medoc, he wrote a scientific thesis on the "Influence of the different soils of Saint-Emilion on the phenolic composition of red wines”. He was the production manager for the Adanti winery in Bevagna (Perugia, Italy) from September 1996 to July 2001 and, then, in September and October of the same year he managed production for the company Gabriel Meffre (Gigondas, France) AOC Costieres de Nîmes. Self-employed since 1998, he is now a consultant in charge of production at several Italian wineries in Umbria and Tuscany, including: Tenute Silvio Nardi, Siro Pacenti and Caprili in Montalcino; Tenuta Valdipiatta and Croce di Febo" in Montepulciano; Azienda Agricola Buccianera and La Pineta in Arezzo; Terre dei Capitani and Napolini in Montefalco; and Agricola La Palerna in San Giustino Umbro. Since 2006, he has been director and co-owner of the Rubinstein laboratories in Foiano della Chiana (Arezzo, Italy) specializing in oenological testing.
